frozen peanut butter & chocolate drops {gluten-free / vegan / sugar-free}


Sorry for being MIA recently. I've been really busy, and honestly I'm finding myself in a blog identity crisis {don't you love those???}. Bear with me, friends.

I crave something sweet after dinner every night, and the other night I thought that instead of buying a blizzard {because Brad and I have bought three blizzards in the past week! I know, judge away...} I would make something a little "healthier." You know, since I gave up sugar and everything ;] I had great intentions with that resolution... I really did.

Anyways, here's the recipe for these tasty summer treats.

ingredients

1 ripe banana
2 spoonfuls of peanut butter
6 dates
1/2 cup of chocolate chips {sugar-free }
1 tablespoon of coconut oil





instructions

In a blender or food processor, mix together the banana, peanut butter, and dates. Once they are mixed well, take spoonfuls of the "dough" and place on a cookie sheet lined with wax paper. In a microwave or double broiler, melt the chocolate chips and coconut oil. Once it's melted, drizzle chocolate over the dough. Place the drops in the freezer for 30 minutes, or until ready to enjoy!

72 hours with my mama {St. George}

72 hours with my mom {downtown salt lake city}


My sweet mom was here for 72 hours this past weekend. Where the time went? Well, I'll tell ya. We went to Salt Lake City, down to St. George, up to Provo, and back to Salt Lake City. We wouldn't have gone all the way down to St. George, but Brad had playoff games for baseball, so we jumped in the car and drove down to watch him coach. I am so thankful for all the time I got to spend with her over Mother's Day weekend. Whenever she's around I know I can breath a little easier, take down all the walls, and be my complete self. I can say anything, and I know she will love me just the same {if not more for being honest}. She understands me, and would do anything to protect me. I appreciate her so much. Living a couple states away makes you cherish the time you get to spend with your family. Anyone who lives close to their family, don't take it for granted... Ya hear?! Alright, enough sulking about the fact that I miss my mom. I want this post to be about how much fun we had together. Because we had lots of fun. We laughed. A lot. I forgot how funny my mom is. She's so funny without even realizing it. And now with social media, she's even funnier. Her and instagram... I die! I just love this woman, and I'm so thankful I get to laugh through life with her.

old towne grill in downtown provo

Friday night Brad and I ventured a whole three blocks down from our apartment to the Old Towne Grill. A couple from our church owns it, and we had been wanting to check it out for months, but just hadn't made any plans to go. It's hard to motivate yourself to walk at night in the dead of winter, but now that it's still light outside when we both get home from work, it's a lot easier to "be motivated" to walk three blocks down the street for dinner {we're pathetic, aren't we???}. The restaurant had such a fun environment. I'm already dreaming about sitting outside under those large table umbrellas in the heat of the summer. The drinks even came in mason jars. Mason Jars! You know I'm into that. Brad on the other hand squirms every time he sees a mason jar... He's scarred from all the mason jar weddings in the past. Poor guy. I on the other hand could drink out of mason jars for the rest of my life and be completely glass satisfied. The food was great, they had lots of gluten-free options, and the laid-back environment made it that much better. I'm so happy that this place is so close to us!
